This Roasted Butternut Squash Quinoa Salad is easy to make and tastes incredible. Roasted butternut squash is delicious and it goes perfect with the quinoa, the red onion and chili.
This quinoa salad is made with roasted butternut squash cubes and onions in a sweet and spicy vinaigrette.

Ingredients
Roasted Butternut Squash
- ¼ Butternut Squash (peel and diced)
- 1 tablespoon olive oil
- pinch of salt
Quinoa salad
- ½ cup quinoa
- 3 tablespoons juice of lemon
- 1 tablespoon balsamic vinegar
- 1 tablespoon Demerara sugar
- 1 medium red onion (diced)
- ¼ cup chives (chopped)
- ¼ teaspoon crushed chilli
- pinch of salt
Instructions
Roasted Butternut Squash
- Preheat the oven to 190℃ (375°F).
- Spread the butternut squash cubes in a single layer on the baking tray, taking care that they do not overlap.
- Drizzle the squash cubes olive oil and pinch of salt.
- Bake for 40 minutes. Let it cool.
Roasted Butternut Squash Quinoa Salad
- Cook the quinoa and let it cool.
- In a salad bowl whisk the juice of lemon, the balsamic vinegar, the red onion, the Demerara sugar, the crushed chili and salt.
- Add the quinoa, the roasted butternut squash cubes and the chives.
- Stir it well and serve.
