Instructions
Roasted Butternut Squash
Preheat the oven to 190℃ (375°F).
Spread the butternut squash cubes in a single layer on the baking tray, taking care that they do not overlap.
Drizzle the squash cubes olive oil and pinch of salt.
Bake for 40 minutes. Let it cool.
Roasted Butternut Squash Quinoa Salad
Cook the quinoa
and let it cool.
In a salad bowl whisk the juice of lemon, the balsamic vinegar, the red onion, the Demerara sugar, the crushed chili and salt.
Add the quinoa, the roasted butternut squash cubes and the chives.
Stir it well and serve.
