This easy, creamy red lentil dahl is packed with plant-based protein and very flavorful.

Ingredients
- 1 onion (diced)
- 4-5 cloves garlic (fine diced)
- 2 teaspoons ginger (fresh, grated)
- 1 teaspoon ground cumin seeds
- 1 carrot (grated)
- 2 teaspoons turmeric powder
- 300 grams red lenils
- 150 grams spinach (sliced)
- 1 teaspoon garam masala powder
- ¼ teaspoon crushed chilli
- salt
- ½ tablespoon sunflower (or canola) oil
Instructions
- Wash the red lentils 3-4 times and soak it until prep all the other ingredients.
- In a medium pan heat oil and add cumin and onion. Cook them for about 40 seconds.
- Add the garlic, ginger and grated carrots. Cook it for 2-3 minutes.
- Add the turmeric and garam masala, stir them well, and cook it for 30-40 seconds.
- Add the red lentils and 2 cups water. Add salt and stir it well. Bring to a boil, cover it with lid and simmer until lentils are soft, about 20-25 minutes.
- Add the spinach and chilli. Cook it for 1-2 minutes.
- Serve it warm.
