Wash the red lentils 3-4 times and soak it until prep all the other ingredients.
In a medium pan heat oil and add cumin and onion. Cook them for about 40 seconds.
Add the garlic, ginger and grated carrots. Cook it for 2-3 minutes.
Add the turmeric and garam masala, stir them well, and cook it for 30-40 seconds.
Add the red lentils and 2 cups water. Add salt and stir it well. Bring to a boil, cover it with lid and simmer until lentils are soft, about 20-25 minutes.
Add the spinach and chilli. Cook it for 1-2 minutes.
