Sweet potatoes soup is really delicious and creamy. Usually we garnish with soup pearls, croutons, toasted pecans or walnuts but my favouirte garnishes are sweet potatoes cubes. They have a crispy caramelized exterior and a soft irresistible interior.

Ingredients
Sweet potato soup
- 2 sweet potatoes (dice)
- 1 onion (dice)
- pinch of salt
- 200 ml double cream
Roasted sweet potato cubes
- 2 sweet potatoes
- 1 tablespoon olive oil (extra virgin)
- pinch of salt
Instructions
Sweet potato soup
- In a large pot put the diced sweet potatoes, diced onion, pinch of salt and 3 liter water. Bring boil and simmer for 20 minutes or potatoes are ready.
- Add double cream then use an immersion blender puree the mixture until smooth.
- Serve it warm and garnish with roasted sweet potato cubes.
Roasted sweet potato cubes
- Preheat the oven to 190 °C.
- Peel and cube the sweet potatoes into 1 cm (1/2 inch) chunks. Trying to get each cube roughly the same size.
- Sprinkle the sweet potato cubes with oil and stir it well.
- Line large baking sheet with parchment paper and spread sweet potato cubes out in a single layer. Sprinkle with salt.
- Bake in the oven for 25-30 minutes.
