Hungarian Chicken Paprikash with “Nokedli”

Ingredients

Chicken Paprikash Recipe

  • 8 chicken legs (preferably thighs, skin-on and bone-in)
  • 1 tablespoon sunflower (or canola) oil
  • 1 large onion diced
  • half Hungarian yellow wax pepper or red bell pepper diced
  • ½ tablespoon Hungarian paprika powder (sweet)
  • 1 teaspoon salt
  • 4-5 tablespoon sour cream (Hungarian: tejföl)

Hungarian Nokedli Recipe

  • 300 grams plain flour
  • 3 eggs
  • 150 ml water
  • pinch of salt

Instructions

Chicken Paprikash Recipe

  • Heat the oil in a large pan and add the diced onion and a pinch of salt. Cook slowly until the onions are clear and glassy. Place the chicken thighs skin-side down in the pan. Cook 2 minutes on one side, until well browned, then turn them over and cook 2 minutes on the other side.
  • Remove the pot from the heat, add the sweet (Hungarian) paprika powder, stir. (Do not burn the paprika!) Pour in just enough water to cover.
  • Replace the pot on the heat. Add the diced pepper and the salt. Cover and cook it slowly for about 1 hour.
  • When the chicken is done, add the sour cream to the chicken paprikash sauce and mix it. 
  • Serve with nokedli noodle or rice.

Hungarian Nokedli Recipe

  • Mix well the flour, the eggs, the water and the salt.
  • Place a nokedli grater over the pot of boiling water, and make the noodles.
  • When the noodles float to the top, wait about 30 seconds and drain them.
