Peach and Pickled Red Onion Salad has just two ingredients but it is colorful and mind blowing delicious! Taste the summer!
Servings: 4 people
Ingredients
- 2-3 medium red onions
- ½ tablespoon (10 %) white vinegar
- 1 tablespoon sugar
- ½ teaspoon salt
Instructions
- Cut the red onions. I use a knife (not mandoline) because I like if pickled onions are little bit crunchy.
- Put the sliced onion in a jar.
- Boil a cup of water.
- Add the vinegar, sugar and salt to the hot water and stir it until the sugar and salt dissolve. Pour the mix over the onions.
- Put the lid on the jar and close it. Set aside to cool to room temperature, then put the onions in the fridge for overnight.
Notes
The pickled onions will keep in the fridge for up to 2 weeks.
You can seasoning the pickled onion with garlic, chilli, pepper or thyme.
Pickled red onions are a gorgeous, vibrant pink, tangy, sweet, and a little crunchy. They go perfectly with fresh peaches and nectarines.

- Slice the peaches and place them into a large serving dish.
- Put the pickled red onions on the peaches.
- Enjoy!

You can sprinkle fresh thyme or honey.
