Cooked quinoa is nice and fluffy and likes acids and spices. The quinoa salad light and tasty. Easy to make and good to eat.

Ingredients
- ½ cup quinoa any color
- 3 cups water
Instructions
- In a saucepan pour the water and bring to a boil.
- Rinse the quinoa.
- Put the quinoa in a saucepan.
- Cook the quinoa for 15 minutes.
- Drain, refresh under running water and set aside to dry well.

Ingredients
- ½ cup quinoa any color
- 3 oranges pealed, diced
- 1 apple diced
- 10-12 black olives sliced
- 1 red onion diced
- 2 tablespoon balsamic glaze
- 1 tablespoon olive oil extra virgin
- pinch of salt
- ¼ cup coriander (cilantro) chopped
Instructions
- Cook the quinoa.
- Mix the fine diced red onion with the balsamic galze and the extra virgin olive oil.
- Add the orange, the apple, the coriander, the sliced black olive and the salt.
- Mix it well and serve.
