Vegan Creamed Spinach is my favorite spinach recipe. Easy to make and really delicious. The cashew-based sauce give a perfect texture to the spinach dish what the garlic is seasoning.
Servings: 2 people
Ingredients
- 1 onion (diced)
- 2-3 cloves garlic (diced)
- 500 grams spinach leaves
- salt
- ½ tablespoon sunflower (or canola) oil
- 70-80 grams cashews
Instructions
- In a medium pen heat the oil with the onion, garlic and cashews. Cook on medium heat for 10-12 minutes until they’re golden.
- Add the spinach, salt and 1 cup water. Cook for 3-4 minutes.
- Blend the spinach with an immersion blender.
Notes
For the creamed spinach you can use fresh or frozen spinach.
You can serve the vegan creamed spinach with cooked rice or tortilla chips. I like it so much with tortilla chips.
