In a medium pen heat the oil with the onion, garlic and cashews. Cook on medium heat for 10-12 minutes until they’re golden.
Add the spinach, salt and 1 cup water. Cook for 3-4 minutes.
Blend the spinach with an immersion blender.
Notes
For the creamed spinach you can use fresh or frozen spinach.You can serve the vegan creamed spinach with cooked rice or tortilla chips. I like it so much with tortilla chips.
