This vegan Rice Pudding is a very creamy and delicious dessert. The ultimate comfort food when I need something sweet.
Servings: 2 people
Ingredients
- 50 grams rice
- 500 grams cold water
- 3-4 tablespoons coconut milk
Instructions
- Rinse the rice.
- In a small pot add the water to rice.
- Bring it to a boil. Reduce the heat, cover the pot with a lid and simmer the rice for 20 minutes.
- Don't remove the lid. Let the rice cool for 3-4 hours.
- Add the coconut milk to the rice and mix it well.
- Serve it with raisins, a sprinkling of ground cinnamon, nutmeg or cacao powder. You can top this rice pudding with any fresh fruit you like.
Notes
You can use medium-grain or long-grain rice like basmati, jasmine or arborio rice.
