Tandoori Masala Courgette
Roasting courgette with Tandoori Masala brings out wonderful flavors. Easy to make and very delicious vegan and gluten-free dish.

- 1 red onion (sliced)
- 2 small zucchinis (courgettes) (diced)
- 1 teaspoon Tandoori masala (Tandoori spice mix)
- 1 teaspoon sunflower (or canola) oil
- 2 spring onions (sliced)
In medium pan heat oil.
Add the sliced red onion and roast for 1-2 minutes.
Add the diced courgettes and roast for 3-4 minutes.
Add the tandoori spice mix and mix it well. Roast for another 1-2 minutes.
Serve with cooked rice and sprinkle it with spring onion.
