Ingredients

Roasted Butternut Squash

  • ¼ Butternut Squash (peel and diced)
  • 1 tablespoon olive oil
  • pinch of salt

Quinoa salad

  • ½ cup quinoa
  • 3 tablespoons juice of lemon
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon Demerara sugar
  • 1 medium red onion (diced)
  • ¼ cup chives (chopped)
  • ¼ teaspoon crushed chilli
  • pinch of salt

Instructions

Roasted Butternut Squash

  • Preheat the oven to 190℃ (375°F).
  • Spread the butternut squash cubes in a single layer on the baking tray, taking care that they do not overlap.
  • Drizzle the squash cubes olive oil and pinch of salt.
  • Bake for 40 minutes. Let it cool.

Roasted Butternut Squash Quinoa Salad

  • Cook the quinoa and let it cool.
  • In a salad bowl whisk the juice of lemon, the balsamic vinegar, the red onion, the Demerara sugar, the crushed chili and salt.
  • Add the quinoa, the roasted butternut squash cubes and the chives.
  • Stir it well and serve.
