Ingredients

  • 1 onion (diced)
  • 4-5 cloves garlic (fine diced)
  • 2 teaspoons ginger (fresh, grated)
  • 1 teaspoon ground cumin seeds
  • 1 carrot (grated)
  • 2 teaspoons turmeric powder
  • 300 grams red lenils
  • 150 grams spinach (sliced)
  • 1 teaspoon garam masala powder
  • ¼ teaspoon crushed chilli
  • salt
  • ½ tablespoon sunflower (or canola) oil

Instructions

  • Wash the red lentils 3-4 times and soak it until prep all the other ingredients.
  • In a medium pan heat oil and add cumin and onion. Cook them for about 40 seconds.
  • Add the garlic, ginger and grated carrots. Cook it for 2-3 minutes.
  • Add the turmeric and garam masala, stir them well, and cook it for 30-40 seconds.
  • Add the red lentils and 2 cups water. Add salt and stir it well. Bring to a boil, cover it with lid and simmer until lentils are soft, about 20-25 minutes.
  • Add the spinach and chilli. Cook it for 1-2 minutes.
  • Serve it warm.
