I try to eat half kilo of raw vegetable every day. This Apple, Celeriac and Parsley Raw Salad is my favourite.
This raw salad recipe is super easy. No baking, no cooking, no difficult methodes, but you need a food chopper.
Vegan Gluten-free: Apple, Celeriac and Parsley Raw Salad
Delicious raw salad made from boring vegetables. Super easy to make and I like to eat it.
Servings 2 people
Ingredients
- 1 apple
- ¼ celeriac
- 1 carrot
- 1 medium red onion
- 1 bunche parsley
- 2 tablespoons juice of lemon
- 2 tablespoons olive oil
- ½ tablespoons honey
- pinch of salt
- pinch of crushed chili
Instructions
- In a large bowl mix the olive oil, juice of lemon, honey, salt and crushed chilli.
- Wash, quarter the apples and remove the core from the middle. Peel the celeriac and the carrot.
- Cut the apples, celeriac, carrot, red onion and parsley in the food chopper into small pieces.
- Add the vegetable mix to the olive oil mix and stir it well. Serve and enjoy!
Notes
You can sprinkle with flax seeds, sesame seeds or sunflower seeds.
You can add 1 cup of cooked quinoa to the raw salad and ready the apple celeriac and parsley quinoa salad.
